Lemon is by far my favorite fruit. I love it with everything, especially chocolate. However, just having it by itself is a lovely treat too. You get to taste all the tartness. When I got married, my husband told me just how much he enjoyed this dessert (I suppose it doesn’t hurt that lemon desserts are his favorite). If you’d like these lemon bars more tart, you can add more lemon zest.
Lemon Bars

Crust:
2 cups flour
1/2 cup powdered sugar
1 cup butter
Preheat oven to 350 degrees. Spray a 9 x 13″ pan with cooking spray. Mix all ingredients together with a pastry blender and then press into the bottom of the pan. (I like to cut the cold butter with a knife into chunks and then dump into the flour mixture. Then, using my fingers, break up the butter into small pea-size bits.) Bake for about 20-25 minutes. Filling:
4 beaten eggs
2 cups sugar
1/3 cup lemon juice (fresh or bottled)
1/4 cup flour
1/2 teaspoon baking powder
zest of half of a lemon
Mix all ingredients together and pour over the crust. The crust does not need to be cooled. Bake for about 20-25 minutes. When the bars are cooled, dust with powdered sugar and serve.
