
4th of July is one of my favorite holidays. In the Pacific Northwest, it seems to mark a turning point in the weather. It’s like summer has now officially arrived. (Although more times than not, we have low 70-degree weather and FREEZE watching the fireworks.) Another reason I love this holiday are all the fireworks! And getting together with friends and family to share a meal and conversation. We’re planning a very low-key event this year, with just my parents and in-laws coming over for an outdoor bbq and then watching the fireworks in our cul-de-sac.
When I was thinking of what desserts I wanted to put on this list, easy to transport and won’t melt in the sun were the criteria I used. There are a few recipes that if you make you’ll want to put in the fridge until you eat it, but they won’t melt right away. Happy baking!
