Monster Bars

It is no secret that I love chocolate and peanut butter. They make a perfectly sweet pairing. I have many recipes on this blog that incorporate the two, and I feel you can never have too much of a good thing. Today’s recipe is no exception.

These bars are great because everything is all mixed in one bowl and then dumped into a pan. There are oats, peanut butter, chocolate chips and M&Ms. For the M&Ms, I used the baking ones, which are quite small, but regular ones work just as well. Or even more chocolate chips or peanut butter chips. Yum!

My kids put these bars in a bowl with a scoop of vanilla ice cream on top for an added indulgence, but no matter how you choose to enjoy it, you can’t go wrong. It’s so easy and simple and absolutely delicious! Enjoy! xoxo

Monster Bars

Prep Time: 15 minutes

Total Time: 45 minutes

Serves: 12 large bars

½ c (1 stick) unsalted butter, room temperature

½ c peanut butter (smooth or crunchy), not natural

1 c packed brown sugar

1 c granulated sugar

1 t pure vanilla

1 t baking soda

1 t salt

2 eggs

4 c oats (not instant)

1 c chocolate chips

1 c M&Ms

Preheat oven to 350 degrees.  Line a 9×13 inch pan with parchment paper and then spray with cooking spray.  Set aside.

In a mixer with a paddle attachment, cream the butter, peanut butter, brown sugar, sugar, vanilla, baking soda, and salt until light and fluffy (3-4 minutes).  Add the eggs and mix until there is no trace of egg. Then add the oats, chocolate chips, and M&Ms, mixing until just evenly dispersed. 

Dump the mixture into the 9×13 pan and spread evenly with a rubber spatula.  Bake for 30-40 minutes, or until a toothpick comes out clean and the edges are golden brown.


When cooled, use the parchment paper to lift out of the pan and place on a cutting board.  Cut into bars and serve. Store remaining bars in an air-tight container for up to 3 days.
